The Easiest Pumpkin Cookies EVER!

I am not lying when I say this…these truly are easy and delicious.  If that’s not enough to sell you on these scrumptious little morsels, they are also low fat.  So , now there is absolutely no reason why you couldn’t eat 80 of them if you want, right? He he. I was told about these cookies by a client (thanks Norma!) and they were also floating around Pinterest quite a bit, so I have no idea who to really credit with the original recipe, but whoever it was..you’re a genius.  I did make up my own icing recipe for them, because I have to have cream cheese with all things pumpkin.  It’s a rule.  So, here you go, I hope you enjoy them as much as my family does….guilt free…

 

Easy Pumpkin Cookies with Whipped Cream Cheese Icing

 

Here are the ingredients…ready?…

Yep, that’s it.  Just a box of Spice Cake mix and a can of Pumpkin.  Mix these two ingredients together in a bowl..

then scoop the batter out onto a parchment lines cookie sheet with a small ice cream scoop and bake at 350 degrees for about 18 minutes.

That is it.  Seriously.

Pretty easy, huh? 

Now for the icing..

Take an 8 ounce brick of softened cream cheese and beat together with 2 Cups of powdered sugar.  Once it’s well combined, fold in an 8 ounce container of cool whip and a teaspoon of vanilla. 

I put the icing into a plastic bag and snip the end off of one corner and pipe it onto the cookies.  They end up looking like this..

They are delicious and simple and perfect for a fall get together when you’re running short on time.  I’ll give you one more tip for the road..  Eat one right away, cause your family will destroy them in about 30 seconds and you’ll be out of luck..I know this from experience.
