Pumpkin Chocolate Chip Cookies

The rain finally came in and the temperature dropped, so that automatically had me rummaging through my fall recipes. Fall is my favorite time of the year, the food, the leaves, the cool weather, and I finally get to wear long sleeves, which means I get a break from trying to cover up my meaty arms all summer (it's a genetic curse).

One of my favorite fall recipes is Pumpkin Chocolate Chip Cookies. I've had the recipe so long and have made it so many times, that I honestly have no idea who to credit for it originally. So, if you gave me this recipe..and you happen to be reading this...me and my meaty arms thank you!

First up..
Combine 1/2 Cup of butter and 1&1/2 Cups of sugar in a bowl and cream together. It should look like this...

Add 1 Egg and mix well, then 1 tsp. Of Vanilla and 1 Cup of canned Pumpkin..

Meanwhile, sift together 2&1/2 Cups of regular old flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 1 tsp nutmeg, and 1 tsp cinnamon.

Add the flour mixture to the creamed mixture slowly. For a great and relatively mess free way to do this, go to my Chocolate Chip Cookie Recipe.

Once the the two become one, add about 12 ounces (or one bag) of chocolate chips. The mixture should look like this..

Take a cool, parchment lined cookie sheet (if you do not have parchment paper then grease your cookie pan very well) and spread out the dough accordingly. Note that I do not refrigerate this dough..there is no need.

Bake in a preheated 350 degree oven for 15 minutes

While we are waiting on the cookies to bake let me take a minute to pay homage to my favorite baking tool, my magnetic measuring spoons. They are awesome, they stay together, they are always where I can find them, I love them, I am going to marry them..

Good thing that didn't get weird. Now the cookies are done and they look fantabulous..

It's so hard not to shove one in my mouth and scald my tongue off, but I resist. They are a delicious blend of pumpkiny goodness...wonderful! ..and yes, I just made "pumpkiny" a word..write it down so I get proper credit.

I hope you enjoy these as much as we do! Oh, and you should try to make them with white chocolate chips too...yummy!

Have A Wonderful Sunday!
Love,
Val

  1. I have to try this recipe! The white chocolate chips are a great idea. Now I know where Ben gets his imagination......you're already married to Adam. You CANNOT marry your magnetic measuring spoons!!!!
